6 Cookie Recipes to Get Bakin’ Ready for the Holidays!


If you’re an undergraduate student like me, winter holidays can mean either one of two things: either you’re incredibly worked up from the semester that just ended and need something to continue feeling productive, or you’re very eager to finally try out a hobby before the new semester starts and fizzles out your short-lived interest. Whichever boat you find yourself in, baking cookies can be an incredible way to spend your time this holiday season. It’s a great time to share joy and care with friends and family, and if you’re alone, it’s an opportunity to indulge in some self-care and try something new. Bringing you from my saved folder of recipes I want to try and share with my loved ones, here are 6 easy cookie recipes you can try this break!

1. Chewy Molasses Cookies: (Vegan)

Starting us off strong, we have a Molasses Cookie recipe from the Love and Lemons blog by Jeanine Donofrio, NYT bestselling cookbook author, and this recipe can easily be made vegan. It all comes together just shy of 30 minutes, and it can be a fun activity to engage in on a sleepover night with your friends! A tray of lovely spiced cookies with a warm glass of your preferred milk can be a sweet ending to the day whenever you need to get a great night’s sleep. 

2. Classic Sugar Cookies: (Dairy-Free)

One cannot call it a holiday season without indulging in the timeless delight of classic sugar cookies. This dairy-free recipe from Simply Whisked by Melissa Belanger balances sweetness and simplicity, and it requires no chilling! Whether you’re hosting a small holiday party or simply trying out something new this holiday season, these cookies are a simple treat to bake, and they add warm sweetness to your day.

3. Peanut Butter Cookies: (Vegan) 

If you’re a peanut butter lover like me, you will absolutely love these vegan peanut butter cookies! The recipe is so easy and requires only basic ingredients that you probably already have in your pantry.  In just a couple of minutes, you will have a batch of cookies that are perfect for snacking, sharing, or enjoying with a cup of tea or coffee.

4. Flourless Fudge Cookies: (Gluten-Free) 

Crisp edges? Fudgy middles? Gluten-free? SIGN ME UP! This flourless fudge cookie recipe From I Heart Eating by Kate Uhl Dean is a delightful treat to ease yourself into baking if you’re just starting out this winter and a quick snack to make in batches for your midnight cravings! The recipe calls for less than 15 minutes of your time, including prep time (wow!) and only needs items that are most probably abundant in your pantry already. 

5. Ginger Bread Cookies:

Gingerbread cookies are a staple holiday dessert, and they taste absolutely delicious! This recipe by Lauren Allen from the Tastes Better From Scratch blog makes them incredibly soft and chewy. Plus, the best part is that you can turn this into a post-dinner activity and decorate them with your friends and family! Who doesn’t love a wholesome activity to bond over with loved ones?

6. Scottish Shortbread Cookies: (Vegan, Gluten-Free)

Shortbread derived its name from the very fact that it only requires a short cooking time. To make it even easier, Rebecca Pytell’s recipe from her blog Strength and Sunshine calls for only 3 ingredients while keeping it vegan, gluten-free, and allergy-free! These go delightfully well with coffee or tea, and you can bake up a couple of batches in no time so you can munch on delicious goodness while finishing up your favourite series at this moment.
